The pistachio is considered the queen of nuts, undoubtedly because 3,000 years ago it was adored by the Queen of Sheba, before conquering the Middle East, the Mediterranean countries, and even California! Pistachios need a dry, sunny climate to develop their full aroma and acquire the most beautiful shades of green, then naturally open their shells once ripe.
